| Nancy's Favorite Salad |
|
Ingredients:
- Grape Tomatoes
- Sweet Onions
- 1 can Mandarin oranges drained (reserving juice)
- Romaine lettuce or any other green lettuce in combination with
Romaine. Note: Iceberg lettuce has no nutritional value). Hint:
the darker the green of the lettuce, the more nutrients.
- Sprinkle of walnuts or other nuts of choice.
Hint: roasted unsalted soybean nuts are especially healthy.
- Sprinkle of blue cheese
- Ground pepper
Dressing:
- 1/4 to 1/2 cup rice wine vinegar
- dash of pepper, to taste
- garlic to taste
- 1 tablespoon olive or canola oil
- dash of the reserved mandarin juice, or to desired consistency
- 1/2 can of mandarin oranges
- 1 tablespoon of honey or Dijon mustard
Hint: Omitting oil and substituting mustard (honey mustard or
Dijon) will thicken the dressing, as oil does.
Instructions:
- Wisk ingredients together and toss
with salad.
- Add remaining oranges to top of salad.
