Nancy's Favorite Salad

Ingredients:

  • Grape Tomatoes
  • Sweet Onions
  • 1 can Mandarin oranges drained (reserving juice)
  • Romaine lettuce or any other green lettuce in combination with Romaine. Note: Iceberg lettuce has no nutritional value). Hint: the darker the green of the lettuce, the more nutrients.
  • Sprinkle of walnuts or other nuts of choice.
    Hint: roasted unsalted soybean nuts are especially healthy.
  • Sprinkle of blue cheese
  • Ground pepper

Dressing:

  • 1/4 to 1/2 cup rice wine vinegar
  • dash of pepper, to taste
  • garlic to taste
  • 1 tablespoon olive or canola oil
  • dash of the reserved mandarin juice, or to desired consistency
  • 1/2 can of mandarin oranges
  • 1 tablespoon of honey or Dijon mustard

Hint: Omitting oil and substituting mustard (honey mustard or Dijon) will thicken the dressing, as oil does.

Instructions:

  1. Wisk ingredients together and toss
    with salad.
  2. Add remaining oranges to top of salad.
